Traditional Canarian Fish Dish: Tollos
Tollos are a popular element of Canarian cuisine, consisting of sun-dried strips of dogfish, although other shark varieties can also be used. This traditional dish is cherished throughout the Canary Islands.
Ingredients:
- 1½ kg of tollos
- 3 heads of garlic
- 1 heaped tablespoon of cumin
- 1 tablespoon of coarse salt
- 3 tablespoons of paprika
- 1 pepper
- Breadcrumbs from 1 piece of bread soaked in half a glass of vinegar
- 1 glass of water
- 3 strands of hot saffron
- ½ litre of oil
Preparation:
Soak the tollos the day before. Prepare a paste by crushing the garlic, cumin, salt, pepper, paprika, and the soaked breadcrumbs. Then, add the oil, water, and saffron (which should be heated in the lid of a pot over the flame). Pour this mixture over the tollos placed in the pot. Allow everything to cook carefully, ensuring the tollos remain intact.
