The La Laguna Market Inspires Your June Menu: Oven-Baked Chicken Thighs with Peppers

Today, we bring you a straightforward and cost-effective recipe, perfect for everyone in the household. Chicken thighs are available fresh in the market at a very reasonable price.

Traditional Comfort Food

Traditional dishes continue to hold a prominent place in daily cooking thanks to simple, economical, and flavourful recipes. Baked chicken thighs with peppers are one such dish that combines basic ingredients with easy preparation, resulting in juicy meat and roasted vegetables that add colour and aroma to the meal. It’s an ideal option for a family meal or for anyone looking to enjoy homemade cooking without fuss.

Ingredients

(Serves 4)

  • 4 chicken thighs
  • 2 red peppers
  • 1 green pepper
  • 1 onion
  • 3 cloves of garlic
  • 100 ml white wine
  • Extra virgin olive oil
  • Salt
  • Black pepper
  • Thyme and rosemary to taste

Method

Preheat the oven to 200 degrees Celsius.

Slice the peppers into strips and the onion into julienne. Place the vegetables in an ovenproof dish and add the whole garlic cloves.

Season the chicken thighs with salt and pepper and arrange them on top of the vegetables.

Drizzle with a splash of olive oil and the white wine, then sprinkle with thyme and rosemary.

Bake for approximately 45-50 minutes, turning the chicken halfway through cooking to ensure it browns on both sides.

Once the skin is crispy and the vegetables are tender, remove from the oven and serve hot.

The result is a tasty and balanced dish, perfect to accompany with roasted potatoes, white rice, or a fresh salad.
