Simple Baked Potatoes for San Juan Celebrations
Today we’re sharing an easy recipe perfect for the San Juan festivities, which you can adapt to suit your tastes or those of your guests.
This dish evokes fond memories of evenings spent with friends waiting eagerly for baked potatoes wrapped in foil from the San Juan bonfire. It also reminds us of youthful barbecues where potatoes would find their spot alongside sizzling sausages and chops.
Ingredients:
- Large potatoes
- Extra virgin olive oil
- Salt
- Black pepper
- Fresh chopped garlic
- Fresh chopped chervil (or parsley)
Method:
- Wash the potatoes thoroughly, dry them, and cut them nearly in half. Rub with olive oil, and sprinkle with salt, pepper, and any preferred spices. Wrap them tightly in aluminium foil.
- Bury the potatoes in the embers of the fire for about 30 minutes. Carefully remove them once cooked and unwrap.
If you like, scoop out some of the potato flesh into a bowl and mix it with butter and milk to create a mash. Sauté some onions lightly, then combine them with the potato mash, half of the cheese, and herbs. Season with salt and pepper. Fill the potato skins with this mixture and top with the remaining cheese.
