Laguneros are one of the most iconic sweets in the pastry tradition of San Cristóbal de La Laguna, located on the island of Tenerife. Traditionally made with puff pastry and filled with guava paste or angel hair, they are known for their crisp texture and distinctive sweet glaze. This dessert is part of the Canarian gastronomic heritage and is typically enjoyed alongside coffee or as an afternoon snack. Its flavour and artisanal preparation have made laguneros a symbol of the local pastry scene, beloved by both island residents and visitors to this historic city.
Ingredients:
– 2 sheets of puff pastry
– 150 g of guava paste (or angel hair)
– 50 g of icing sugar
– 1 tablespoon of lemon juice
– 1 tablespoon of hot water

Method:
Preheat the oven to 220 °C.
Roll out the puff pastry and cut it into rectangles measuring approximately 6 × 15 cm.
Place a teaspoon of filling in the centre of each rectangle.
Fold each piece to form a ring.
Bake for about 20 minutes, until golden.
Allow to cool on a wire rack.
Mix the icing sugar with the lemon juice and hot water until a thick glaze forms.
Brush the laguneros with the glaze and allow to dry.
These treats are perfect for pairing with a barraquito, a traditional Tenerife coffee made with condensed milk, coffee, frothed milk, cinnamon, and lemon peel.
