Simple Beef and Potato Stew from La Laguna
This hearty dish, a staple in many households, has various recipes passed down through generations. The version we’re sharing today comes from La Laguna.
Ingredients:
- 1 kg beef
- 1 large onion
- 2 tomatoes
- ½ head of garlic
- 1 green pepper
- 1 bay leaf
- 1 sprig of thyme
- 1 glass white wine
- ½ tablespoon paprika
- 1 large carrot
- Water
- 1 kg potatoes
Method:
Begin by cutting the beef into cubes, seasoning with salt and pepper, and browning it in oil. Once browned, set it aside.
In the same oil, sauté the chopped onion, tomatoes, and green pepper, along with some crushed garlic. When the mixture is nearly cooked, add the bay leaf, thyme, and paprika, then pour in the white wine and a splash of water. Shortly after, return the beef to the pan and add the carrot, sliced into rounds.
Once everything has simmered, add a dash of brandy and adjust the seasoning. Finally, incorporate the peeled potatoes, cut into similar-sized cubes as the beef, and lightly fried.
