A Delicious Local Dish: Garbanzas Recipe
Garbanzas, a traditional dish, is a staple in homes around Laguna for the San Benito festival. Last year, I had the pleasure of tasting some truly delicious ones, and I’m hopeful this recipe will inspire you to make your own this year.
Ingredients:
- 1 kg garbanzas (chickpeas)
- 2 onions
- 1 red pepper
- 1 head of garlic
- 2 large tomatoes
- 1 packet of saffron
- 1 tablespoon paprika
- ½ tablespoon salt
- ¼ litre oil
- 1 pig’s trotter
- A piece of good chorizo
- A piece of serrano ham
- A piece of smoked pancetta
Method:
Soak the chickpeas in water for 24 hours. Cook them with the pancetta and pig’s trotter over medium heat, without adding salt. Meanwhile, prepare a sauté with chopped onion, the whole head of garlic, peeled and deseeded tomatoes, and the red pepper.
Once this mixture is ready, add the paprika and saffron (which should be heated on the lid of the pot with the chickpeas), along with the chopped chorizo and ham. Let it all simmer for a while. When the chickpeas are tender but not overly soft, mix in the sauté and allow everything to cook together a bit longer, adjusting the salt if needed.
