The La Laguna Market Inspires Your June Festive Menus: Lagunera-Style Stuffed Potatoes

It feels like I’m currently passing by Casa Micaela after leaving school. As I walk through that small door onto Calle Anchieta, I remember a time when there was a sort of dining area where people played cards and dominoes, and the aroma of stuffed potatoes wafted in, waiting for diners seated around the table.

Laguna-style stuffed potatoes are a simple yet complete dish. What can I say? Personally, I love them.

Ingredients:

(Serves 4)

  • 8 medium potatoes
  • 600g minced pork
  • 2 cloves of garlic
  • 3 sprigs of parsley
  • Salt
  • Freshly ground black pepper
  • 2 eggs

For the Sauce:

  • 75ml olive oil
  • 1 onion
  • 1 glass of white wine
  • 2 cloves of garlic
  • Parsley
  • 1 bay leaf
  • Saffron
  • Water

Method:

Let’s get started

Season the minced meat with finely chopped garlic, parsley, eggs, salt, and pepper. Mix well and let it rest while we hollow out the potatoes.

Peel and wash the potatoes. Using a corer or a hollowing tool, scoop out the potatoes, leaving a thickness of about 1 cm.

Using a teaspoon, fill the potatoes with the meat mixture.

If there is leftover meat, shape it into meatballs, dust with a little flour, and fry them in the same oil used to seal the potatoes.

The scooped-out potato bits can be reserved for frying as a side or added to the sauce with the stuffed potatoes. I prefer to add them to the sauce for a thicker texture.

In a large pot, heat the olive oil and seal the potatoes on the side where they were stuffed to prevent the meat from spilling out during cooking. Remove them to a dish until ready to add to the sauce.

In a mortar, crush the garlic and parsley.

Finely chop the onion and garlic, and sauté them in the oil used to seal the potatoes. Add the white wine and allow it to simmer for a couple of minutes. Then add the saffron, bay leaf, and the stuffed potatoes, covering them with water. Let them start cooking, at which point add the crushed garlic and parsley.

Cook until the potatoes are tender, adding more water if necessary. Check the salt halfway through cooking to adjust if needed.
