The La Laguna Market Inspires Your June Party Menus: Banana Cake

Banana cake is a highly regarded dessert in Tenerife, where the banana is one of the island’s most representative agricultural products. Thanks to the favourable climatic conditions, Canarian bananas are known for their sweet flavour and high quality. This makes them a key ingredient in numerous traditional and modern recipes. The banana cake combines the soft texture and distinctive aroma of this fruit with simple ingredients, resulting in a nutritious and delicious dessert that is part of Tenerife’s culinary heritage and cultural identity.

Ingredients:

– 3/4 cup of corn or sunflower oil
– 2 cups of plain flour
– 2 cups of sugar
– 4 eggs
– 100 grams of chopped walnuts
– 4 ripe bananas, mashed
– 1 teaspoon of baking powder
– 1 teaspoon of cinnamon
– A pinch of salt

Instructions

Preheat the oven to 200°C. Grease and flour the cake tin. Mash the bananas with a fork. Combine all the ingredients in a mixing bowl using a wooden spoon, including the oil, except for the walnuts. Finally, add the chopped walnuts coated with a little flour to prevent them from sinking to the bottom of the mixture. Bake in the oven for approximately 45-50 minutes until golden brown.
