Cristian Sandez Caramaza (Lanzarote), Paul Cobo Gómez (Gran Canaria), Xiaofen Yang Wang (Gran Canaria), José Ignacio Ulrich Redondo (Tenerife) and Daniel Ten Boquera (Tenerife) are the five chosen to compete in the 9th Absolute Canarian Championship of Ham Cutting Gran Premio Montesano Group.
This competition will take place on the 28th, in the afternoon (from 4:30 p.m.), within the framework ofl 7th Gastronomic Hall of the Canary Islands GastroCanarias 2022that It will take place from 27 to 29 at the Fairgrounds.
The purpose of this contest is to promote and enhance the professionalism of Canary Island ham cutters, as well as to recognize and reward the professional cutter from the Islands that demonstrates the greatest ability and dexterity when cutting a Montesano ham.
In two hours, each finalist must slice and plate a whole leg divided into a plate of grams each of the mace, the contramaza or babilla, the tip, the shank, presentation or artistic, in addition to the largest amount possible of 100-gram dishes, many of which can be tasted by the public.
