The La Orotava gofio mills were chosen by the Association of Industrial Tourism Operators (AOTI) to represent the Canary Islands in the first edition in Spain of the Industrial Tourism Guide, which has the dual objective of providing the general public with knowledge of the majority of attractive resources of a nature. at the same time putting in value the reality of a territory and its historical socio-economic activity, including aspects such as the urban and landscape evolution of a certain locality or region. In this first guide to the Spanish industrial heritage there are 140 resources distributed throughout the national geography to discover a type of tourism that has more and more followers in Spain.
For the AOTI, the hydraulic mills of the Villa de La Orotava are fully representative to be included in this unique and thematic guide, since they meet the double condition of being a patrimonial asset provided with a historical component that constitutes one of the most significant signs of the cultural identity of the town, and, at the same time, remains in operation through the two mills that are preserved today producing gofio.
With photographs by Samuel García Acosta and texts by the Cultural Heritage technician, Pablo Domingo Torres, the guide, published in digital format and free access through the municipal website, includes a semblance of the significance represented by the water mills in the historical evolution of the town, as well as a brief description of its main morphological characteristics. The mills were declared a Site of Cultural Interest on July 4, 2006.
