La Orotava’s Grand Puchero: A Flavorful Feast for 5,000 Diners

The locality of La Florida, situated in the upper region of La Orotava, recently hosted a Traditional Canarian Puchero, which saw the involvement of 130 volunteers alongside numerous students from the Leoncio Estévez de la Florida school, aiming to serve over 5,000 individuals.

Those partaking in the event began to savour the dish from 2:00 p.m., although queues had already started to form by midday in anticipation of their meal.

This year, the layout of the area was altered, creating one entrance queue and another for exit, allowing for a more organised distribution and preventing crowding.

At the conclusion of the event, the committee arranged several tables so that attendees could savour their meals in comfort.

The traditional stew is an integral part of the Florida Fiestas in honour of San Antonio Abad and the Virgen de la Esperanza, which has been designated as having Tourist interest of the Canary Islands.

The total weight of the ingredients surpasses 4,000 kilos, including over 700 kilos of pumpkin; more than 700 kilos of chayotes; 400 kilos of choles; 90 kilos of beans; 90 kilos of carrots; 20 kilos of pineapples; 18 bags of potatoes and 50 kilos of sweet potato; 80 kilos of chickpeas; cochinillo ribs; bacon; 50 kilos of leeks; 20 kilos of garlic; four bags of onions; 15 kilos of parsley; and 250 kilos of gofio.

The preparation of the stew is conducted over a low flame using dry broom from the Teide National Park, requiring a minimum cooking time of two hours.
