The public hospitals within the Canarian Health Service, which is part of the Ministry of Health of the Government of the Canary Islands, will provide, for the Christmas festivities, special menus to ensure that patients can enjoy the offerings prepared by culinary professionals during Christmas Eve and Christmas Day.
Considering the diverse medical conditions of the patients, the prepared menus will adhere to medical guidelines and be customised to meet their nutritional requirements. Consequently, the meals will consist of various options that cater to individuals with hypertension, diabetes, or those who need low-fat or astringent diets, among others.
Below are the menus from different hospitals in the Canary Islands for this Christmas Eve:
Tenerife
Canary Islands University Hospital
The Canary Islands University Hospital Complex (HUC) will present its patients on Christmas Eve with a menu that includes chicken and beef broth for starters, followed by beef sirloin with demi-glace sauce accompanied by cheese wanton, vegetable vol-au-vent, and crispy beetroot with lovely potatoes. For dessert, griddle cake or apple flan will be served.
Our Lady of Candelaria University Hospital
Patients at the Nuestra Señora de Candelaria University Hospital will also benefit from a special menu during this festive occasion. The Christmas Eve dinner will commence with Lyonnaises with pumpkin cream and cider, followed by sea bass with sweet potato as the main course. Additionally, for dessert, a fruit cocktail and a Christmas assortment will be provided, along with a glass of cider.
La Palma
General Hospital of La Palma
The General Hospital of La Palma will offer various croquettes as a starter for Christmas Eve, followed by queen consommé as the first course, Christmas roll accompanied by broccoli and parsley potatoes for the main dish, and Christmas sweets for dessert.
La Gomera
Our Lady of Guadalupe Hospital
The Hospital Nuestra Señora de Guadalupe, in La Gomera, will feature a Christmas Eve menu that includes seafood soup as the first course, followed by pork loin with plum and apple sauce as the main dish, and nougat mousse with chocolate wafer and Christmas sweets for dessert.
El Hierro
Our Lady of the Kings Hospital
At the Nuestra Señora de los Reyes Hospital in El Hierro, the Christmas Eve dinner will include chicken soup as the first course, followed by baked lamb shoulder with mashed potatoes, and nougat mousse for dessert.

Gran Canaria
Maternal and Child University Hospital
At the Insular-Maternal and Child University Hospital Complex, patients will be served seafood soup as the first course during the Christmas Eve dinner on December 24, followed by cheek with mushroom and broccoli sauce alongside duchess potatoes for the main course, and nougat with roasted pear for dessert.
University Hospital of Gran Canaria Dr. Negrín
The University Hospital of Gran Canaria Dr. Negrín will provide its patients with a traditional Christmas Eve dinner featuring either parmentier cream, vegetable cream, or chicken soup as a starter, based on dietary needs. The main course will include grilled salmon with yogurt and dill sauce served with baked potatoes and wild asparagus, stuffed meat roll with yogurt and dill sauce, vegetable lasagna with green sauce, or salmon cake. For dessert, patients can choose cheesecake with blueberries, tangerines, applesauce, or blueberry jelly.
Each tray will also come with an assortment box featuring individual portions of Christmas treats and a Christmas card.
Lanzarote
Doctor José Molina Orosa University Hospital
Patients at the Doctor José Molina Orosa University Hospital will savour a traditional Christmas Eve dinner consisting of seafood soup as the starter, followed by pork tenderloin medallions with apple sauce and a side of potatoes accompanied with sautéed carrots and garlic, while dessert will feature cheesecake with cranberries along with the classic Christmas assortment.
Fuerteventura
Fuerteventura General Hospital
For Christmas Eve, the General Hospital of Fuerteventura will present a menu tailored to patients’ dietary needs that includes seafood bisque, candied artichoke hearts with serrano ham shavings and truffle oil, beef Rossini with foie and mushrooms on brioche bread, potato and beet millefeuille with black garlic alioli, a wheat tortilla cone stuffed with salmon, prawns, spinach, and mushrooms, and concluding with horchata cake complemented by fartons for dessert.
