The brothers Juan Carlos and Jonathan Padrónwho run the restaurants El Rincón de Juan Carlos, in Tenerife, and Poemas by Hermanos Padrón, in Gran Canariahave been in charge of opening the extensive program of the airline Binter in Madrid Fusion. The airline is attending the largest gastronomy fair in Spain for the first time, supported by renowned names in Canary Islands cuisine. As well as with the intention of highlighting the exchange between destinations by sponsoring this edition, and together with Madrid Fusion Foods from Spainthe award for Best Hotel Breakfastwhose absolute winner will be announced on Wednesday, January 31.
The day began at 10:00 a.m. with the presence of the Padrón brothers, with two Stars in the Michelin Guide Spain and Portugal 2023 and three Repsol soles, which kicked off the program with a trip through the gastronomy of the Canary Islands led by Binter. In the words of Juan Carlos, they wanted to show “the gastronomic routes and the corners where we can see beautiful things about our islands, apart from the gastronomy, which adds to the experience of a Binter traveler.” Some of the establishments recommended by the chefs were the Bar Padilla, in Las Zocas (Tenerife)famous for maintaining the tradition of “jareas”, or 100% puff pastry, the pastry located in
San Juan Beach (Tenerife).
This was followed by a great breakfast with the chef. Oscar Molinaresponsible for the entire gastronomy of Ibiza Gran Hotel (Ibiza), which this year is one of the three finalist hotels for the award sponsored by Binter. After the presentation, attendees were able to enjoy a great display of flavors and textures. Molina emphasizes that being among the finalists is “recognition after many years of work” and considers it “great that an airline promotes what I believe is the most delicious thing in Spain, which is food.”
The chef and cook of Brazilian origin João Faraco from the Coentro restaurant (Lanzarote) and best chef in the Canary Islands 2018presented different products from the unusual islands, such as smoked products from SmokeHouse La Gomera or pastrami and cheeses made on the island of Lanzarote.
To end the morning, the Minister of Agriculture, Livestock, Fisheries and Food Sovereignty of the Cabildo of La Palma and representative of Saborea La Palma, Alberto Jesus Paz Hernandez, presented the palm breed cow and the great possibilities of the product. Next, the CEO of Tourism of Tenerife, Dimple Melwanihighlighted the value of the island as a gastronomic destination, which Binter can collaborate in its promotion.
The afternoon’s activities began with a presentation by the influencers Canary Foodies about gastronomic routes in Gran Canaria and Tenerife where the protagonists are Canarian chefs. Marcos Ascanioone of the members of this gastronomic couple, highlights Binter’s commitment to connecting with new destinations that link the islands with the peninsula by opening “many avenues” to discover the gastronomy of other places, such as Vigo, Jerez, Murcia or Madrid.
To close the day, Jonathan Garciarecognized for its Suertes del Marqués winerywhich in recent years has been receiving great praise from international critics, held a wine pairing workshop from Presas Ocampo Wineries and Canarian cheeses. He was “happy for the public attendance” and believes that the new air connections will be beneficial for Canarian residents, who will have more travel options, and to attract people from other places interested in gastronomic tourism.
The agenda of the Binter stand at Fitur stand 14.1 will continue tomorrow, Tuesday, January 30, with a busy calendar of events alongside great gastronomy professionals from the islands and other destinations.

10:00-11:00 a.m.: Breakfast with candidates for the “Best Hotel Breakfast” Award: Finca Cortesín (Casares, Málaga).
11:00-12:00 hours: Thematic tastings by islands + tastings of local products: Tasting of products from Gran Canaria: La Finca de La Laja by Víctor Lugo (coffee and wine) + Deg-on Atlantic sea bass from Aquanaria, presented by chef Jose Luis Espino (Bevir restaurant, 1 Michelin star).
12:00-1:00 p.m.: Talk with a Tourism representative from Saborea Lanzarote.
3:00 p.m.-4:00 p.m.: Presentation of gastronomic routes by Canarian chefs: Gran Canaria gastronomic route by chef José Luis Espino (1 Michelin star restaurant) + Tenerife gastronomic route by Jesús Camacho (Tenerife, rest.Donaire, Michelin recommended).
4:00 p.m.-5:00 p.m.: Tasting of Canarian wines and cheeses presented by the sommelier of the Bevir restaurant, Airam De Acosta.
