Madrid Fusión brings together the best flavors of Tenerife in 350 square meters

An almost perfect mix of local products from the primary sector, the best gastronomy on the Island and the attractiveness of a consolidated tourist destination that proposes to go beyond the search for sun and sand. This is the basic cocktail gathered in 350 square meters -the largest stand of the most important national forum in the sector- with which it faces Tenerife the appointment in the XXI edition of Madrid Fusión, the great annual fair of the sector, which will take place over three days, from the 23rd to the 25th of this month, at the Ifema in the capital of Spain.

“There is enormous interest in finding out what Tenerife offers this year, since we have established ourselves at the fair.” This was stated by the president of the Cabildo, Pedro Martín, who presented the island offer at the event together with the councilors of the primary sector, Javier Parrilla, and Tenerife Tourism, David Pérez, as well as the island director of the area, Laura Castro.

Quality and quantity

There is quality and also quantity in the offer. For example, spaciousness since the Island will show all its flavors –and smells– in an experiential appointment of the senses whose axis will be, as last year, the restaurant integrated into the Tenerife Despierta Emociones stand. The venue will debut a format with side screens that will bring Tenerife’s landscapes to the 48 diners, mostly critics and professionals, who will be distributed over six tables with eight chairs each.

The best products from the primary sector and our own gastronomy, with an ambitious proposal and by chefs of recognized international prestige. As on other occasions, the team is led by Juan Carlos Clemente, who will be accompanied by Pablo Pastor to guide the general public through the workshops, tastings and culinary demonstrations in the reserved space in the Saborea España container. A universe of earthly treasures such as wines, fresh meats, honey, cheeses, avocados, potatoes and sweet potatoes, and fruits, among which the mango stands out.

Themed breakfasts, lunches and snacks will show circular gastronomy and kilometer 0 products. On Monday the 23rd, the tradition with the North Zone, on Tuesday the 24th it will be the turn of the South and the restaurants in the hotels and on Wednesday the 25th the Metropolitan Area.

  • The Island shows its enormous wealth and variety of wines with the sample of 70 different references from the six Denominations of Origin. With a similar level in cheeses or fruits.

More than 40 fixed references of the six Denominations of Origin (DO) of the Island – Tacoronte Acentejo; Pay; Guimar Valley; La Orotava Valley; Ycoden Daute Isora and Islands Canary Islands– and another 20 at specific times can be tasted in the Wine Tunnel. Place reserved as a novelty for the promotion of products from seven representative municipalities of the South, North and Metropolitan Area: Arona, Adeje, Guía de Isora, Santiago del Teide, Icod de los Vinos, Puerto de la Cruz and Candelaria. Plus Santa Cruz and La Laguna for the reference to Anaga.

The agenda

Tenerife will land at Madrid Fusión 2023 with two keynote presentations by chefs from the Island. The first by Adrián Bosch and Eduardo Domínguez, from the San Hô restaurant (which has just received its first Michelin star) and the second by Diana Marcelino , from El Secreto de Chimiche, which will develop the great transversality of the kid from Tenerife.

The third edition of the National Contest for Mojos and Dishes with Mojo harmonized with Tenerife Wines stands out. A contest for which six finalists have been chosen from the twenty who signed up. It will distinguish the Best Mojo and the Best Dish with Mojo harmonized with wines from the island. Finally, the participation of Laura Suárez (Habatonka pastry shop) in the Revelation Pastry Contest 2023, as a representative of the Island, stands out. Gastronomic tastings, four daily workshops on different products, three wine tastings, two live demonstrations… With Tenerife as the center.

Square meter

  • The Wine Tunnel repeats after its successful presentation last year. This time it will be 75 square meters with 40 references from the six island Denominations of Origin, together again.

Formative bet

Pedro Martín highlighted the continued commitment to training, “so our delegation will once again have cooking and dining students”, in this case, from the Punta Larga and Virgen de la Candelaria institutes. His presence “represents a great opportunity and will serve as an experience for them to continue making their way in the gastronomic world.” He stressed the commitment to gastronomy as an added and fundamental value in Tenerife’s tourist offer, capable of generating experiences and attracting tourism that comes to “enjoy our local, quality, diverse and rich in flavors product”.

Javier Parrilla affirmed that “Tenerife is diversity, and it is demonstrated with its nature and the extensive agricultural biodiversity that it enjoys. During her speech, the island director Laura Castro recalled that “in 2022 more than a million visitors chose Tenerife for its gastronomy and a high percentage visited wineries, markets and popular festivals.” For his part, David Pérez announced that “this year everything will revolve around the circular economy, how to make the gastronomic ecosystem more sustainable, fair and equitable for a better use of the product in all senses”.
