SANTA CRUZ DE TENERIFE, 13 Apr. (EUROPE PRESS) –
Three students from the Canary Islands School Hotels, a center attached to the Canary Islands Government’s Ministry of Tourism, Industry and Commerce (Hecansa), are specializing in R&D applied to cooking at the renowned Basque restaurant ‘Mugaritz’, an establishment with two Michelin stars and whose chef, Andoni Luis Adúriz, is considered one of the most influential today, thanks to his commitment to “evolution and interdisciplinarity in cooking”, in his own words.
The students, who are already in this Gipuzkoan restaurant, will work in the kitchen, two of them, and the third in the dining room.
They will remain there until next October, the period in which the establishment is open, since the remaining four months the establishment is closed to dedicate them to creativity, the center details in a note.
These three students will live a gastronomic experience, previously carried out after a period of work and research, which has been tested in tastings with people from different disciplines, such as the film director Asier Altuna, the producer Marian Fernández and the illustrator Cristina Daura .
The environment in which they will learn is considered one of the most innovative in the world by cooking specialists.
In fact, since 2006 it has been listed among the top 10 restaurants in the world by ‘Restaurant’ magazine.
Andoni Luis Adúriz has made the union of different disciplines the hallmark of his Mugaritz, which “is more than just a restaurant”.
Proof of this commitment is their work with the AZTI marine and food research center or with the Imaging Institute, a research center on the Internet and information and communication technologies.
In addition, Andoni Luis Aduriz has always made a firm commitment to training and has taught courses at the universities of the Basque Country, Deusto, at the Alain Ducasse Training Center in France, and at The Culinary Institute of America in United States, among others.
In this way, Hecansa offers its students the possibility of training with the best inside and outside the Canary Islands, and of carrying out their training practices in unique establishments.
Hecansa’s regulated training allows access to the Food and Beverage Management, Hotel Management, Kitchen Management and Gastronomy programs.
