Culture, Memory and Flavor: The Dwarfs of La Palma Now Have Their Own Tasting Menu
There are stories that are sung, others that are danced, and some that are eaten. In an exclusive corner of the south of Tenerife, one of the most emotional and ambitious culinary tributes the Canary Islands has seen in recent times has been served.

A sensory journey that traverses volcanoes, forgotten recipes, and the very essence of the Beautiful Island. And this menu not only nourishes: it rescues, celebrates, and evokes emotion.

The much-anticipated opening

The restaurant Cráter Identidad Canaria, located in the Royal Hideaway Corales Villas (Costa Adeje), has launched its season with a proposal dedicated entirely to La Palma. The result: a tasting menu called “The Dance of the Dwarfs,” which gastronomically explores the history, ingredients, and most representative flavours of this island.

At the helm of the project is the Canarian chef Eduardo Domínguez, who, along with his team, has thoroughly researched the traditional recipes of La Palma, many of which are at risk of disappearing. The aim: to give them a second life in a contemporary style, without losing an ounce of their original soul.

Each dish of the menu is a nod to the territory of La Palma. From the palm pepper, the tomato of La Galga, or the legendary escachón, to sweet goat and chocomojo, each dish tells a story of resilience, creativity, and flavour.

The experience is complemented by pairings selected by the sommelier. Additionally, the experience is not limited to the plate: the serving team brings a friendly, fun, and educational tone to each service. The result is an evening where you learn as much as you enjoy.

Price and details

This tasting menu has a price of 105 euros per person (excluding drinks). Although it is not economical, those who have tried it agree: “It’s a menu without a single mistake.” The proposal is designed for two people and is offered during the current season, with plans to change the celebrated island in the next edition.

Crater Identidad Canaria is not just an author restaurant. It is a gastronomic memory project that immerses itself each year in the identity of a different island in the archipelago to offer a contemporary and emotional view of its cuisine. A proposal that invites you to savour the Canary Islands bite by bite.
