In this culinary competition full of flavor and creativity, the chef Frank Gomez Cortesresident in Los Realejos (Tenerife), emerged as the winner with his sandwich “De cabra la cosa”.
Champion
The winning creation consisted of a delicious pretzel bun filled with an exquisite recipe for shredded goat meat, in a culinary tribute to Fuerteventura. The meat was cooked in red mojo sauce, accompanied by tomato and mint chutney, grilled Güímar cheese, fresh lamb’s lettuce and a touch of palm honey, creating a combination of unique and authentic flavors.
Second
Second place went to Daniel Castro Espinarof Gran Canaria, with its “Octopus in beer with pickled yolk” sandwich. His creation captivated the jury with a baked octopus marinated in beer and garlic, complemented by a hollandaise-type sauce made with egg yolk and pickled mussel oil. The freshness of the lamb’s lettuce and the crunchy texture of the nori seaweed breaded with quinoa completed this surprising combination.
Third
In the third position stood out Priscilla Rocha Uranga, from Tenerife, with his sandwich “Se me fue el baifo”. His proposal consisted of a careful maceration of goat meat with spices, cooked in a wine reduction and accompanied by almogrote, rocket, apples, roasted onion and semi-cured cheese with Fuerteventura paprika, creating a harmony of flavors that delighted the palate.
Originality and Canarian essence
The first three classified received cash prizes of 500, 300 and 100 euros, respectively, as well as an exciting trip for two in gold class, along with their vehicle, on any of Fred’s inter-island routes. Olsen Express.
The jury, chaired by Chus Abad Rico de Fred. Olsen Express, had the participation of renowned gastronomic experts such as Jorge Peñate Batista, chef of the Gran Hotel Meliá Palacio de Isora and winner of the 2014 Canarian Cooking Championship-GastroCanarias, Fernando Núñez, gastronomic journalist and director of the program “El Enyesque” on Lancelot TV , Thomas Leeb, president of ACYRE Gran Canaria, and Antonio Miguel Díaz Ramos, food journalist and former director of COPE Gran Canaria. Their evaluation focused on highlighting the Canarian spirit and flavor in the finalist sandwiches, as well as the originality of the ingredients, the preparation technique and the presentation.
The Absolute Canarian Bocadillos Canarian Author Championship – Big prize Fred. Olsen Express, promoted by the Organization of the Canary Islands Gastronomic Show with the support of the Island Council of Tenerife, has as its main objective to value bread as a base for special gastronomic creations and encourage the creativity of professionals at all levels.
