The Costa Martiánez Tourist Complex hosts from yesterday and until tomorrow the III Congress of Sustainable Gastronomy, an event that encourages the consumption of local and local products for their quality and also to protect the planet’s environment. The inauguration was attended by the mayor of Porto, Marco González (PSOE); the Minister of Agriculture of the Canary Islands GovernmentAlicia Vanoostende, and the Councilor for Agriculture of the Cabildo de Tenerife, Javier Parrilla, who highlighted the importance of this “essential appointment to learn first-hand about the possibilities offered by the most local products”.
Marco González considers that this congress is “a capital meeting for the city because it also means the very present commitment of the municipality and its entire tourism sector for the local economy, of which zero kilometer products are the main protagonist.” In addition, he emphasizes the value of “this commitment in which we have been working so that our main economic sector has sustainability as the main vector from which to deploy all its actions in which gastronomy plays a fundamental role”.
The Sala Andrómeda will host the events of these conferences where Canarian specialists will show the work they carry out in different fields to make gastronomy a fundamental tool “to contribute to the sustainability of the planet with a clear Canarian accent». The genetics of Canarian corn, the study of oil, cider and gofio were some of the ingredients of the first day, which today are completed with the participation of the Director General of Research and Coordination of Sustainable Development of the Government of the Canary Islands David Padrón; the Fundación Alternativas, which will have a space to talk about the challenges of sustainable food in Spain, and the expert in International Cooperation, the Peruvian Manuel Méndez Guerrero, will talk about his experience on the ground in terms of tourism and sustainable gastronomy in the Amazon Peruvian. Water and its efficiency will also be discussed today.
Lis Peña, one of those responsible for Sabores del Norte along with Sonia García, from Sabores del Norte, organizers of the event together with Senet consultants, detail that this Friday, on the last day of the congress, it will be time to look at the importance of technology in the development of new techniques in the kitchen, artisanal fishing within the Buenamar project, the study of algae, the cooperative as a business management model or a look at the cannabis industry on the islands.
This III Congress has the support of the City Council of Puerto de la Cruz, the Government of the Canary Islands through its General Directorate of Research and Coordination of Sustainable Development and the Canarian Institute of Agrifood Quality, as well as the area of Agriculture, Livestock and Fishing of the Cabildo of Tenerife.
