The act of delivery of Diplomas to the fifth promotion of the Course of Sommeliers – organized by the Regulatory Councils of Wines of Ycoden Daute Isora and Canary Islands canarywine through its Canary Islands Wine Campus – took place yesterday, Tuesday, July 26, at the headquarters of said Regulatory Councils, located in La Guancha, Tenerife.
For more than twenty-five years now, the Ycoden Daute Isora Denomination of Origin – in collaboration with the PDO Canary Islands Canary Wine since its creation in 2011 – they have been relentlessly betting on training as an improvement tool for the wine sector, one of the most prestigious training actions being their Sommelier Course, which has been taking place since 2018 and in this act they graduated their V promotion .
With this emotional act, more than 275 hours of face-to-face teaching activities distributed over six months of training at the highest level with top national and international teachers such as Paco del Castillo, Enrique Flores, Javier Gila, Joaquín Gálvez, Adonis Pino, Hugo Pérez del Valle, Juan Jesús Méndez Siverio, Rasa Strankauskaite, Miguel Ángel Guisado, Joan Casajuana, Iván Monreal, Pascal Privat, Zebina Hernández, José Eugenio Alonso, David Seijas, Zoa Hernández, Guillermina Sánchez, Tanaira Rodríguez , Víctor Damián Dorta and Abel López Millán, among others.
During this time, the participating students have been able to technically discover the development of Viticulture and Oenology, learn about the wine geography of the Canary Islands, Spain and the world, as well as its different wines, and at the same time develop the different aspects of sensory analysis and their specificities. On the other hand, special attention has been paid to identifying the functions and tasks of the Sommelier, developing a professional profile in accordance with them and getting to know the winery in depth, as well as the management of its operation. Finally, they have been introduced to knowledge and tastings of other products such as oils, coffees, beers, waters, cheeses, honeys, vermouth, spirits, and pure tobacco.
The act of awarding diplomas to the sixteen new sommeliers was chaired by Juan Jesús Méndez Siverio, director of the Sommelier Course at the Canary Islands Wine Campus, and was attended by Eugenio Alonso, a full member of the Regulatory Council of the Denomination of Origin Ycoden Daute Isora and professor of the course, Felipe Monje, member of the plenary session of the Regulatory Council of the Designation of Origin Islas Canarias – Canary Wine and on behalf of the students with Carolina Ramos Barroso on their behalf.
With the culmination of this course with the award ceremony, the planned objective of educating another promotion of sommelier professionals, trained by the best specialists in the sector at a national level, has been more than fulfilled. These new sommeliers are the hope for the future of the wine sector and who are expected to contribute all their knowledge towards the improvement of our vineyards, wineries and Canarian wines, helping to promote knowledge and appreciation of these by locals and visitors. .
